Fruit Pizza





We love a good pizza! Homemade ones are even better. It has a crust. It has cheese. It even has fresh toppings. But have you tried a fruit pizza? Ok guys, I have to warn you, this pizza is on the incredibly soft, chewy, lightly sweetened side of life. Oh so heavenly.

It's so fun to do with your kids, take to a party, have for your guests or even for a tasty treat. 

Moms, you can even make this pizza ahead of time and have it prepared in no time! 

This pizza makes for the perfect Summer treat which is why I make these for my girlfriends for brunch parties and last night's special supper club. A few days before the event, I pre-make the cookie dough and bake it. Then once the whole cookie cools, I spread the cream cheese frosting and decorate with fruit and refrigerate.

Ingredients
Homemade Fruit Puzza Crust

To Assemble: (use any combination of fruit desired)
  • diced kiwis
  • sliced strawberries
  • blueberries or blackberries
  • raspberries
  • cherries 
For the Frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup organic cane sugar
  • 1 teaspoon vanilla

Steps
  • Preheat oven to 350°F.  
  • In a large bowl, combine the flour, baking soda, baking powder, salt and stir to blend for 20 seconds.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the sugar and butter, mix in egg and vanilla until light and fluffy.
  • Slowly blend in the dry ingredients into the wet ingredients
  • Lighly spray or use a little coconut oil on a 12 -inch pizza pan. 
  • Line the pan with parchment paper. (I cut mine to fit circle of pizza pan)
  • Spay hands with cooking spray then spread cookie dough into an even layer in bottom of prepared pizza pan.
  • Bake 12-14 minutes until edges are golden. 
  • Cool completely on wire rack.


  • Meanwhile, prepare the frosting; in a large bowl, use an electric mixer to beat the cream cheese, sugar and vanilla until well-blended. 
  • Spread the frosting in a thin, even layer over the surface of the cookie, leaving a small margin around the edges. Layer the fresh fruit over the frosting. 
  • Store in the refrigerator until ready to serve.
  • Optional: Mix 1/4 cup of apricot preserves (pressed through a sieve to remove lumps) with 1 tbs water. Stir together and brush mixture over fruit to make it shiny.
