Easy Stove Top Popcorn!
Easy go- to snack for the whole family! Movie Night? You don't have to go to the movies to eat yummy tasting popcorn. If you pop it yourself, you know your getting the real deal. Besides the taste is different and it's much more real tasting than store bought popcorn you pop in the microwave or even theater popcorn. I love all varieties, sweet and savory and so does our picky eater! Thank goodness, because it's a natural whole grain and a great source of fiber.
Important note! Make sure you search for a bag of kernels that reads non- GMO since the vast majority of corn in this country is grown from genetically modified seed.
You only need 3 ingredients to make our easy homemade popcorn! Coconut oil is the secret ingredient. Coconut oil is great for popping popcorn because it tolerates high heat and offers more health benefits than other oils. It adds a slight coconut flavor to the popcorn, but it isn't overwhelming. Don't worry if you aren't a coconut fan. The flavor won't overpower your popcorn.
Ingredients:
1-2 TBS coconut oil
1/2 cup popcorn kernels
1 tsp sea salt & nutritional yeast
Note: You can sprinkle any seasonings you prefer. Sugar your fancy if you like kettle tasting popcorn. And moms, this goes well with a glass of wine too!
Directions:
1. In a large pot with a lid, heat the coconut oil over medium-high heat. Add 2 or 3 kernels first to start popping for maximum heat. Then add the rest of the kernels. Cover and stir or shake the pot until popping slows down. The popcorn should be done popping in about 2 minutes.
2. Remove from the heat and pour popcorn into a large bowl. Sprinkle with sea salt and toss.

*Note-the popcorn will keep for 2-3 days. Store in an air-tight container or Ziploc bag.
