After nap snack


I experimented yesterday while Vincent was taking a nap on a quick healthy delicious snack. 
It's definitely a healthier version of the pudding snacks purchased at the grocery store and without all the added sugar. In fact, this includes 0 sugar, except the 6 grams of sugar in the coconut milk. So thick and creamy and did I mention so naturally delicious!

Chocolate Chia Seed Pudding (makes 2 servings)

  • 1/2 cup coconut milk (unsweetened)
  • 1 tbs of 100% natural raw cocoa powder (unsweetened)
  • 1/4 cup of chia seeds
Preparation

1. Stir all ingredients together in bowl. 
2. Cover
3. Refrigerate for 30 min, then stir. 
4. Allow another hour in refrigerator. 
5. Enjoy!

Serving tip: Sprinkle with mini chocolate chips and or serve with strawberry slices!
