Easy Homemade Pops

We live in Texas, so the weather here is HOT HOT! So to keep our tot cool and hydrated, my husband and I make popsicles. He started juicing for us to get some power kicks in the morning. So he suggested filling up our son's popsicle molds with some of his juice. This is the perfect way for our son to get some of his fruits and veggies.
He absolutely LOVES them. Here are some healthy recipes for some refreshing pops.

ORANGE KICK

  • 1 orange (peeled)
  • 4 carrots
  • 1 apple (cored)
  • 4 pineapple chunks
Juice all ingredients in juicer. We like Jack Lalanne's JLSS Power Juicer
Will yield up to 3 molds and 2 servings of juice for 2

CREAMY STRAWBERRY POPS
  • 1/4c yogurt
  • 10-12 fresh organic strawberries (rinsed and hulled)
Blend until smooth
Pour into molds and freeze

yields 2 molds (2 servings)

BLUEBERRY CHIA SEED POPS
  • 3c fresh or frozen blueberries
  • 2c fresh orange juice
  • 2tbs raw local honey
  • 3tbs chia seeds

In a sauce pan bring first 3 ingredients to a slow simmer for 10 min until berries are soft.
With fork or masher, mash blueberries & remove from heat.
Add chia seeds stir and cool before filling molds.

Freeze upright for 2-3 hours.
Yields approx 6 molds
