Quick Lunch Ideas

I couldn't be more happier to prepare my toddler's lunches for school. Although for many parents, it could be daunting. It requires thought and time. To make things easier and because his lunches have to be cold anyway, I will either make it at night before bed or wake up early to make it.  Funny enough, I was trying to remember if I bought school lunch when I was little or if my mom packed it for me (and if so, what was in it). I honestly cannot recall a single detail! So long story short, I am glad I put so much effort and love into these packed lunches that my son may or may not remember at all. Most importantly, I know what and how much he's eating.

In the morning before school, I always try to make sure he eats a high protein and fiber breakfast. Protein takes a longer time for your body to digest, which in turn keeps you feeling full longer. Have you tried steel cut oats?

Some of his favorites in lunch are fresh fruit and yogurt, and anything snacky that's either sweet and or savory. Veggies always seem to not get eaten so I choose my battles in lunch. For now, I hide them in dinners or in a smoothie. Here are some quick ideas for you. You might even have all the ingredients in your refrigerator. Refer back anytime or subscribe to my email list. I will post more lunches as I go along.
